Mid-Spring Update

The rumor stock exchange have been teeming with hearsay lately, and now it's probably well over due to reveal some of the news.

Rasmus and Adeline will be opening a second bar in Copenhagen later this summer, yes it is true, and no longer a secret. It will be on Vesterbro, in an absolutely gorgeous townhouse, and we can't wait to go there on all our days of. Opening is scheduled to be sometime late in August, so prepare to sip wine in indian summer sun. Yes, there will be an out door area.

Kasper Riewe can't stop winning things. Lately he aced his way through the Danish finals of Diageo's World Class competition. So he and two lovely guys from other bars are going to London in a bit to compete in the European finals, and hopefully we can pack him a lunch bag and send him off to Brazil for the World Finals. More on that later.

A warning: Due to a bad case of staffnightoutitis, Ruby will be closed SUNDAY MAY 20TH. We apologize in advance for the inconvenience, knowing that some of you rely on us for your sunday retox, but we will be back the week after, and we promise, it's not going to become a habit.

And oh, Ruby is yet again nominated as best Cocktail bar in Copenhagen. Go to aok.dk to vote. We won last year. Can we do it again?

Springtime!

We have collectively decided that winter is now officially over, and therefore we proudly present the spring collection of 2012, and what a collection it is. A champagne cocktail smelling excactly like freshly cut grass and flowers and roadside morning mist, dandelions and burdock. And a messed up Mai Tai variation, building carrot juice and celery onto a fresh bottom of white and powerful rum. And loads more of course, but you'll have to come and see for yourselves.

Our very own Kasper Riewe recently went and won the "bartender of the year" challenge during Copenhagen Spirits and Cocktail. It was a tough competition with very skilled opponents, and we congratulate him profoundly. It was a classic cocktail competition, and the last challenge was an old fashioned whisky cocktail. which he apparently aced.

And thank you all who came by Ruby during the barshow. And thanks to the guest bartenders who took their time to grace our basement with their presence. It was a good and long weekend and our livers are grateful there is only one barshow a year.

Much like that ubiquitous cup of sugar you might borrow from your neighbour, Ruby has knocked on the doors one of Stockholm's premiere cocktail venues for a sweet loan of another kind.
In conjunction with Absolut Vodka, hailing from celebrated venue Kåken and 1900, maestros Mathin Lundgren and Björn Kjellberg will be in the house this Thursday 9 February to stimulate your taste buds Swedish-style! The boys will present their twist on a few classics alongside a range of sleek signature cocktails from over the border.
We could go on about the awards, nominations and reviews surrounding these two, but we know that with cocktails named Joy Division and Mean Devil, you'll just want to join in and sample the Stockholm cocktail scene for yourselves. We can't wait!

Also remember that we reintroduce the Bloody Sundays in February, in collaboration with Copenhagen Cooking. Danish Mary with dill schnaps is a new in house hit, and of course the odd ball maniac crazy kid in class, the Beet Up Mary. Saffron, beetroot juice and coconut cream. Logical like fear and sharks.
